As a young chef, I traveled the world seeking new flavors and ingredients to add to my culinary creations. But the humble celery seed brought me back home, to memories of my mother's Thanksgiving stuffing.

 

Celery seed, with its distinct aroma and flavor, has been used in cuisines around the world for centuries. Its origins can be traced back to the Mediterranean and Middle East, where it was first cultivated for its medicinal properties. But it was the Europeans who discovered its culinary potential, using it as a spice in everything from soups and stews to breads and pickles.


Growing up, my mother has always added celery seed to her homemade stuffing, giving it a unique and unforgettable taste. And while I've since traveled the world and sampled countless dishes, her stuffing remains one of my all-time favorites.

 

Today, as a professional chef, I use celery seed in a variety of dishes, both savory and sweet. One of my favorite recipes is a roasted pork tenderloin with celery seed crust, served with a side of braised fennel and apple slaw.
