I have had the pleasure of discovering and incorporating various spices into my cooking. However, my experience with Cinnamon Powder from Sri Lanka has been one of my most memorable culinary journeys. While filming the pilot for Trading Dishes we had the opportunity to cook with this culturally rich spice with the locals. 
 
This spice has a rich history and unique flavor that adds depth to any dish.
Sri Lankan cinnamon, also known as Ceylon cinnamon, is considered the true cinnamon and is widely regarded as the finest cinnamon in the world. The island country has been cultivating cinnamon for over 2,000 years, and its use can be traced back to ancient Egyptian times. Sri Lankan cinnamon has a sweeter and more delicate flavor compared to other types of cinnamon.
