One spice that has captured my attention is the peppercorn. During my travels in Kampot, Cambodia, I was introduced to the unique flavors and aromas of black, red, and white peppercorns.
Black peppercorns have a strong and robust flavor that pairs well with a variety of dishes. They have a long history of use in traditional medicine and were highly prized in ancient times. On the other hand, red peppercorns have a fruity and slightly sweet flavor, perfect for adding a touch of heat to any dish.
White peppercorns have a milder flavor and are commonly used in lighter dishes like seafood and poultry. The differences in flavors and aromas between the three types of peppercorns are truly fascinating. While they all come from the same plant, the differences are due to how they are processed and harvested.
