As a traveling chef, I've had the privilege of tasting some of the world's most exotic spices, but nothing quite prepared me for saffron's distinct flavor and aroma. This vibrant, red-orange spice has a rich history and is known for its intense, earthy, and floral taste. Harvested from the delicate Crocus sativus flower, saffron has been used for centuries in Persian and Mediterranean cuisine.
Saffron is a versatile spice that can be used in both sweet and savory dishes. It pairs beautifully with rice, seafood, and poultry, adding a distinctive flavor and brightening up any dish. One of my favorite recipes using saffron is a classic Iranian dish called Tahchin, a savory rice cake layered with chicken and saffron. The result is a visually stunning and delicious dish, perfect for a special occasion.
