Chef Steven’s Zucchini Pasta

Serves: 4

Shopping List: 1 tablespoon butter 1 tablespoon of coconut oil or Extra Virgin Olive Oil 4 Zucchini (or 1 giant one!) 3 cloves garlic 2 vine ripe tomatoes 2 teaspoons of dried parsley 2 teaspoons of dried basil 2 teaspoons of dried oregano 2 teaspoons of dried cilantro 3 Tablespoons fresh basil Juice of 1/2 a lemon Black pepper + sea salt to taste

Chef Steven’s Instructions: 1. Using a vegetable peeler, peel skin off of zucchini. 2. Using the same peeler; make long strips of zucchini (about 1” wide) peel until seeds are reached. 3. Dice tomatoes 4. Thinly slice basil

Meanwhile: 1. In a large heavy bottom pot, heat over medium high heat. 2. Add butter + oil + heat until shimmering 3. Add garlic + cook until fragrant (about 1 minute) 4. Add zucchini strips + dried herbs (cook for 10 minutes stirring occasionally) 5. Stir in tomatoes + cook for two minutes. 6. Season with salt + pepper 7. Plate, squeeze lemon juice over zucchini pasta + top with fresh basil 8. Eat + Enjoy!
